Stellar's Sirius II model closely resembles the Altair II models, and like the Altair II it has a dual-direction convection fan that increases steam velocity and provides efficient steam distribution throughout the cavity by pulling steam past the cooking pans, then forcing it against the heated cooking chamber wlls to be reheated. The cooking compartement acts as a heat sink, allowing for heat retension, quick recovery and reduced energy consumption, and the steam is now vented through the drain instead out of the upper rear of the cooking compartment - forcing additional circulation of the steam. A clean reservoir cover keeps the water clean and free of food and starches. And there's no boiler do worry about, delime and replace.

As with all our steamers Altair II has 4- and 6-pan countertop sizes and 8-, 10- and 12-pan floor models. (The 12-pan steamer is quite tall, with the top pan at 64.125 inches.) Sirius II requires two separate drain lines to a single funnel or floor drain. They may NOT be manifolded together. Steam vent pipe is incorporated into drain system and is located on the back side, right, if you're facing the back of the steamer.
